Founded by Valentine Merz in New Orleans on October 31, 1907, the brewery began as Dixie Brewing Company. Its original brick building at Tulane Avenue and Tonti Street was designed by architect Louis Lehle and completed that year; a wooden extension followed in 1919. During Prohibition, the business became Dixie Beverage Company. Sold to Coy International in 1983, it was purchased by Joseph and Kendra Elliott Bruno in 1985, filed for Chapter 11 bankruptcy in 1989, and reorganized in 1992. Its beer lineup later included Blackened Voodoo, Crimson Voodoo, and Jazz Amber Light. Hurricane Katrina flooding severely damaged the Tulane Avenue brewery in 2005, ending production there. Beer was contract brewed in Monroe, Wisconsin, then in Memphis, Tennessee, before brewing returned to New Orleans in November 2019. A new facility opened to the public in 2020. In November 2020, the company announced its transition from Dixie Brewing Company to Faubourg Brewing Company; the signage changed in 2021. After the May 2024 New Orleans Jazz & Heritage Festival, the company announced it would close and auction equipment from its New Orleans plant.
