Boston Chicken was founded in 1985 in Newton, Massachusetts, by Steven Kolow and Arthur Cores. The chain expanded rapidly during the early and mid-1990s, building a large restaurant network around rotisserie chicken and side dishes. In February 1995, it added turkey, meatloaf, and ham; later that year, it changed its public name to Boston Market to reflect the broader menu. The corporate name followed in 1997. The company created Einstein Bros. Bagels in 1995 and developed the Boston Carver sandwich line in 1996. After financing rapid growth with substantial debt, it filed for Chapter 11 bankruptcy in 1998. McDonald’s purchased the chain in May 2000, primarily for its real estate holdings, and continued operating it. McDonald’s sold Boston Market to Sun Capital Partners in August 2007. In April 2020, Sun Capital sold it to Engage Brands, LLC, a company of Rohan Group. The chain later faced lawsuits, store closures, and further bankruptcy proceedings. It had about 300 locations at the start of 2023, fewer than 30 by early 2024, and 16 remaining at the end of 2024. Frozen meals and side dishes continued to be sold under the brand in supermarkets.
