Rax Roast Beef began in Springfield, Ohio, in 1967 as JAX Roast Beef, founded by Jack Roschman. General Foods bought the chain in 1969, renamed it RIX Roast Beef, and closed most locations in 1972. Restaurant Administration Corporation, led by J. Patrick Ross, acquired the remaining 10 franchised units and restored the JAX name. The business adopted the Rax name in 1977, when its first Rax-branded franchise opened in Columbus, Ohio. Renamed Rax Restaurants Inc. in 1982, the chain grew past 221 restaurants in 25 states and reached 504 locations in 38 states during the 1980s. After menu and format changes, a 1991 management buyout, and a 1992 bankruptcy, the company merged with Franchise Enterprises Inc. in 1994 as Heartland Food Systems. It returned to the Rax Restaurants name in 1996. Cassady & Associates acquired the brand in 1997, and Rich Donohue purchased the Rax trademark in 2007. As of 2024, Rax was based in Ironton, Ohio, with six restaurants in Illinois, Kentucky, and Ohio.
